my bakery brain

Hi, I’m Kaley! What started with one oven in our home kitchen grew into sold-out farmers markets and eventually our own commercial bakery here in Arizona. As the bakery grew, so did the amount of information I was trying to keep straight every week.

In the beginning, production planning was pretty simple. I knew what flavors we were bringing and how many batches I wanted to make. However, at a certain point, I needed to know how many cookies each recipe yielded, how much inventory was going to each market, what our projected sales were, how much butter and sugar I needed to buy, what fillings needed to be made on Tuesday...and who was packing what for which market.

So I kept adding to my spreadsheet. Every time we ran into a problem, I added something that helped us solve it. Eventually, that spreadsheet basically became my bakery brain. During some weeks, we were planning thousands of cookies across multiple markets and the shop, and it gave me one place to see what we were making, where it was going, what we needed to buy, and what needed to happen each day.

This is the system I used to plan our bakery production weeks, and now I’m sharing it with you.

You don’t need to be making hundreds of cookies for it to be useful, either. If you’re planning 7 batches for one farmers market right now, start using the system while it’s 7. When that eventually becomes 30, 50, or 179 batches...you’ll be really glad you did. ☺️
