How I Display Stuffed Cookies to Sell More (Without Offering Samples)

At farmers markets and pop-ups, one of the biggest challenges is getting people to understand what they’re buying FAST.
For us, everything changed when we started cutting our stuffed cookies in half and displaying the insides.

We got constant double-takes. People literally took off their sunglasses to look closer.
“I’ve never seen anything like this before.”
“Did you bake all of these?!?”
They were even called “stupid… in a good way”.... and honestly? I’ll take it 😂

Between our huge, unique stuffed cookies and how we displayed them, the cookies did the selling for us. Once we switched to this display, we consistently sold out early at markets...without needing to offer samples!


Why Stuffed Cookies Need to Be Shown on the Inside

Stuffed cookies are different from regular cookies.
The filling is the star, but if people can’t see it, they have to imagine it.

And imagination kills impulse buys.

When customers could see the thick fillings, layers, and textures in real life, they didn’t need convincing. They could already picture eating it and couldn't help themselves! We found people would immediately get on Facetime to show their friends/family/partner and see what everyone wanted. It was so fun and humbling to watch.


Exactly How We Displayed Our Cookies

Here’s what worked incredibly well for us:

  • Each week, we sacrificed one cookie per flavor
  • I used a sharp knife and cleanly cut it in half
  • Both halves stayed on display all day
  • We lined them up on a long display board
  • started with a long charcuterie board
  • later upgraded to an elevated monitor stand (worked amazing)

Whenever possible (if they didn't topple over), we stacked the halves on top of each other to add height.  If it was unstable, we would set the halves next to eachother facing the customer.

When a flavor sold out:

  • we left the cookie on the stand so people could still see what we make
  • wrote “SOLD OUT” on the flavor card behind it
  • and added "SOLD OUT" on our giant 5.5-foot chalkboard (which was also a huge attention-grabber)

The result was a dramatic, eye-catching display that stopped people in their tracks.


Why This Replaced Samples Completely

Once we switched to this display method:

  • Lines grew
  • Cookies sold faster
  • People FaceTimed friends to show them the options
  • Orders got bigger because they wanted to try multiple flavors
  • We barely had to explain anything.... the cookies sold themselves

Our very first market, before cutting them in half, we were constantly explaining what was inside each cookie… and it was not effective.

Sacrificing one cookie per week was absolutely worth it.


Why This Works So Well for Stuffed Cookies

This worked because people could see exactly what they were getting.

When customers can visually process:

  • the thickness
  • the fillings
  • the uniqueness
  • the texture

their brain jumps straight to I want to taste that.”

This strategy works best when your cookies are:

  • fat
  • stable when cut
  • visually interesting
  • and not ordinary

We weren’t only just stuffing cookies with Nutella or caramel (though we sprinkled those in too!); our flavors were bold, layered, and unexpected. That curiosity is what made people lean in.


A Quick Note for Bakers Wanting to Try This

Your display can only be as effective as your recipe.

Stuffed cookies need to:

  • hold their shape
  • look good when cut
  • and still taste incredible
